Gravity vs Pump Machines
A gravity machine uses gravity to feed mix from the hopper down into the freezing cylinder. Simpler mechanically, it produces a denser, lower-overrun product that many customers prefer — and works better for products like Italian ice or certain frozen beverages where added air doesn't benefit the final product.
A pump machine uses an internal pump to push mix into the cylinder under pressure, incorporating additional air and delivering higher or more consistent overrun control. Pump machines give you more control over product texture and can reduce mix cost per serving by incorporating more air per cone.
Neither is inherently better. The right choice depends on your mix, your customer's expectations, and your preference for operational simplicity vs product customization. Our sales team walks every buyer through this decision in detail.
Air Cooled vs Water Cooled
Air cooled machines require adequate ventilation space around the unit — typically at least 6 inches on each side and above. They don't require a water hookup, making installation simpler and more flexible. They work well in most Upstate NY operations with adequate kitchen ventilation, though they produce slightly more ambient noise than water-cooled units.
Water cooled machines require a cold water supply line and a drain, but run more efficiently, more quietly, and perform better in warm kitchen environments where ambient temperatures are high — a meaningful advantage in a busy summer kitchen.
