A gravity machine uses gravity to feed mix from the hopper down into the freezing cylinder. A pump machine uses an internal pump to push mix into the cylinder under pressure, which incorporates additional air into the product and creates a higher or more consistent overrun. Pump machines give you more control over overrun and can reduce mix cost by incorporating more air per serving.
