Seasonal ice cream stands, concession operations, and foodservice operators who close for the winter months need to properly protect their Taylor equipment before the building goes unheated. Improper winterization is one of the leading causes of refrigeration system damage we see in the spring — specifically, water left in water-cooled condensers that freezes and ruptures components. This guide covers the official Taylor procedure plus field guidance from our technicians.

Who Needs to Winterize Their Machine

Winterization is critical if any of the following apply:

  • Your building will be unheated — any space that can drop to or below 32°F (0°C) during winter months.
  • You operate seasonally — ice cream stands, concession trailers, summer-only foodservice, or any operation that closes for more than 30 days.
  • You have a water-cooled machine — water-cooled condensers are the highest-risk component. Water left in the lines will freeze and rupture.
  • The machine will be in storage for an extended period — even heated storage benefits from proper shutdown to protect seals, gaskets, and lubricants from drying out.

Air-cooled machines in heated buildings require less intensive winterization but should still go through the shutdown procedure and parts storage steps below.


Before You Shut Down

Complete these steps before your last day of operation, while the machine is still running and accessible.

  1. Perform a full closing procedure — drain product, rinse, run hopper clean, and disassemble per the Daily Cleaning & Sanitizing Guide.
  2. Complete a full manual brush-clean cycle so all parts are thoroughly clean, free of dried mix and lubricant residue, and ready for storage.
  3. Inspect all consumable parts — scraper blades (084350), driveshaft seal (032560), door gaskets (048926), and draw valve O-rings (083693). Replace anything that is worn, nicked, or past its replacement schedule. Starting the season with fresh consumables avoids a service call on opening day.
  4. Order a C712 Tune-Up Kit (X49463-81, $120.32) to have on hand for spring reassembly.

Shutdown & Draining Procedure

Disconnect from main power before winterizing. Failure to disconnect from the main electrical power source may result in electrical damage to the control board and refrigeration components if power surges occur while the building is unoccupied.
  1. Ensure the machine has been fully cleaned, rinsed, and disassembled per the closing procedure. All product and sanitizer must be removed from the freezing cylinders and hoppers before shutdown.
  2. Disconnect the machine from the main power source. Do not rely on the front power switch alone — disconnect at the circuit breaker or unplug from the wall receptacle.
  3. Leave the machine in its disassembled state with the door off and beater removed. This allows air to circulate inside the cylinder and prevents moisture buildup.

Water-Cooled Machine Steps

This section applies only to water-cooled C712 variants. Air-cooled machines (the most common in soft serve operations) skip this section.

This is the highest-risk step in winterization. Water left in a water-cooled condenser will freeze, expand, and rupture the condenser lines. This is an expensive repair and is not covered under warranty if caused by improper winterization.
  1. Disconnect the water supply line from the machine.
  2. Relieve pressure on the spring in the water valve.
  3. Use air pressure on the outlet side of the condenser to blow out any water remaining in the condenser lines. Ensure all water is expelled before the building reaches freezing temperatures.

Storing Detachable Parts

How you store the disassembled parts over winter matters. Dried mix residue attracts pests; improperly stored rubber parts crack; lubricant left on metal parts can go rancid and contaminate product in the spring.

Parts That Must Be Stored Separately

  • Beater assembly (X46231) — Wrap in clean, dry paper or place in a sealed bag. Store flat or hanging — not resting on the blades.
  • Scraper blades (084350) — If blades will be used again in the spring, store flat in a dry location. If they are due for replacement (every 3 months), dispose and order fresh for spring.
  • Driveshaft (032564) and driveshaft seal (032560) — Store together, wrapped. Inspect the seal in spring before reinstalling.
  • Freezer door (X88684) — Store in a dry, protected location. Do not stack heavy items on top of the door.
  • Mix pump assembly (X57029-14) — Store fully disassembled and dry. Do not leave O-rings installed under compression for the entire off-season.

Protecting Rubber Parts & Gaskets

Rubber trim parts and gaskets — including the door gaskets (048926), draw valve O-rings, and driveshaft seal — can be protected by wrapping them with moisture-proof paper. Store in a cool, dry location away from direct sunlight, which accelerates rubber degradation.

All parts must be thoroughly cleaned of dried mix and lubricant residue before storage. Dried mix and lubricant attract mice and other vermin — this is an explicit warning in the Taylor operator's manual and one we hear about every spring from operators who skipped the brush-clean before closing.

Condenser & Exterior

  • Condenser fins (air-cooled) — Clean thoroughly with a soft brush before closing. A dirty condenser sitting all winter will be harder to clean in the spring and reduces efficiency from day one of the new season.
  • Air filter — Remove, vacuum or replace air filter (052779-11) before storage.
  • Exterior surfaces — Wipe down all stainless and plastic panels with a clean, dry towel. Do not leave the machine covered with a tarp that traps moisture.

Complete Winterization Checklist

Use this before leaving for the season. Check off each item before locking up.

  • Full closing procedure completed — product drained, rinsed, hopper cleaned, disassembled.
  • Manual brush-clean completed — all parts washed, rinsed, and air-dried. No dried mix or lubricant residue on any component.
  • Consumable parts inspected — blades, seal, gaskets, O-rings. Replace worn items before storage so you open with fresh parts.
  • Disconnected from main power source — circuit breaker off or unplugged from wall. Front power switch alone is not sufficient.
  • Water supply disconnected (water-cooled only) — water line disconnected and condenser blown out with air pressure from the outlet side.
  • Technician confirmed condenser is dry (water-cooled only) — Taylor Upstate can verify and document for your records.
  • Beater, blades, driveshaft, and door stored — wrapped in clean dry paper and placed in a protected dry location.
  • Rubber parts wrapped — door gaskets, O-rings, and driveshaft seal wrapped in moisture-proof paper.
  • Condenser cleaned (air-cooled) — fins brushed clean, air filter removed and cleaned or replaced.
  • Exterior wiped down — all surfaces clean, machine not covered with moisture-trapping tarp.

Spring Startup Inspection

Before reassembling the machine and returning it to service, run through this inspection. Catching a problem now avoids a mid-season service call during your busiest weeks.

  • Inspect all rubber parts — Look for cracking, deformation, or hardening in gaskets, O-rings, and the driveshaft seal. Replace anything that shows wear. The C712 Tune-Up Kit (X49463-81, $120.32) covers all quarterly-replacement consumables in one order.
  • Inspect scraper blades — Even if blades were in good condition at closing, inspect both for nicks before the new season. Blades stored improperly can develop micro-nicks that will score the cylinder.
  • Inspect beater shoes and front bearing — Check beater front shoes (X50350) for cracks or wear. Replace if there is any doubt.
  • Clean condenser before first run (air-cooled) — Even if cleaned before closing, brush the condenser before startup. Any dust or debris that accumulated over winter should be removed.
  • Reconnect water supply and inspect lines (water-cooled) — Run water through the system before reconnecting to the machine. Inspect all lines for cracks, especially if the building experienced hard freezes.
  • Run full opening procedure before adding mix — Assemble, sanitize, and prime per the Daily Cleaning Guide before the first batch of product.

Common Winterization Questions

If the building stays above freezing and you have an air-cooled machine, your refrigeration system is not at risk from freezing. However, you should still complete the shutdown procedure — drain the machine, brush-clean, store parts properly, and disconnect from power. Leaving the machine assembled with residual mix or sanitizer over a multi-month closure leads to contamination, dried product in tight tolerances, and degraded seals. The opening-day experience is much better when the machine has been properly closed for the season.
Air-cooled machines have louvers or vents on the side panels and a condenser fan that exhausts warm air. Water-cooled machines have water supply and drain lines connected to a water valve — typically at the back of the machine. If you are unsure which type you have, check the data plate on the side of your machine or call Taylor Upstate at 800-678-2956 with your serial number.
Water expands when it freezes. Trapped water in a water-cooled condenser will rupture the tubing — often in multiple places — resulting in a refrigerant leak and a condenser that needs to be replaced. This repair can run several thousand dollars and is not covered under any Taylor warranty because it is a maintenance failure, not a manufacturing defect. This is the single most preventable and most expensive winterization mistake we see.
No. Even if the power is off, leaving the machine assembled with product or sanitizer residue inside creates several problems: dried mix provides nutrients for mold and bacteria growth; O-rings and seals left under continuous compression can deform; and residual lubricant can go rancid and contaminate the first batch of the new season.
