The Taylor C712 is a twin-cylinder, three-spout countertop soft serve freezer. Proper daily cleaning maintains product safety, extends equipment life, and is required by every commercial food service health authority. This guide follows the official Taylor Operator's Manual procedure exactly.

Opening Procedure — Assembly & Sanitizing

We begin at the point where you arrive in the morning and find parts disassembled and laid out to air-dry from the previous night's cleaning. Complete both sides of the machine.

Step 1 — Freezing Cylinder Assembly

Power switch must be in the OFF position throughout assembly. Failure to do so may result in severe personal injury from hazardous moving parts.
  1. Lubricate the groove on the beater driveshaft with Taylor Lube (047518).
  2. Slide the driveshaft boot seal over the small end of the driveshaft and engage into the groove. The middle section of the boot seal must be convex (extending outward) — if it is concave, it is inside-out. Turn it inside-out and reinstall.
  3. Heavily lubricate the inside of the boot seal and also the flat end that contacts the rear shell bearing.
  4. Apply an even coat of lubricant to the shaft. Do not lubricate the hex end.
  5. Insert the driveshaft through the rear shell bearing and engage the hex end firmly into the drive coupling.
  6. Inspect the scraper blades (084350) for nicks or damage. If either blade is nicked or worn, replace both. The blade hole must fit securely over the pin on the beater.
  7. Install the rear scraper blade over the rear holding pin on the beater. Slide the beater halfway into the cylinder.
  8. Install the front scraper blade over the front holding pin.
  9. Inspect the beater shoes (X50350) for nicks, cracks, or wear. Replace if any defects are present.
  10. Install the beater shoes, then slide the beater assembly fully into the cylinder. Turn slightly until properly seated — when in position the beater will not protrude beyond the front of the cylinder.
  11. Repeat for the other side of the machine.

Step 2 — Door Assembly

  1. Inspect door bearings, door gaskets (048926), draw valves (X69615), O-rings (083693), and all surfaces for nicks, cracks, or wear. Replace any damaged parts.
  2. Install the baffle — raise the round end while engaging the lug into the door pocket, then lower to secure.
  3. Place the door gaskets into the grooves on the back of the door. Do not lubricate the gaskets.
  4. Slide two O-rings into the grooves on each prime plug. Apply an even coat of Taylor Lube to the O-rings and shafts. Insert prime plugs into the holes in the top of the door and push down.
  5. Insert the baffle rods through the beaters in the cylinders and seat the door on the freezer studs.
  6. Install handscrews — long handscrews on top, short handscrews on bottom. Tighten equally in a crisscross pattern.
  7. Slide three O-rings into each standard draw valve. Slide the H-ring and O-ring into the center draw valve. Lubricate the H-ring and all O-rings.
  8. Lubricate the inside of the door spouts, top and bottom.
  9. Insert draw valves from the bottom until the slot is visible. Position draw handles with adjustment screw facing down and slide the fork into the slot. Insert the pivot pin through the handles.
  10. Snap design caps over the bottom of the door spouts.
  11. Slide drip pans into the holes in the back and side panels. Install the front drip tray and splash shield under the door spouts.

Step 3 — Mix Pump Assembly

Inspect all rubber and plastic pump parts before assembly. O-rings, check ring, and gasket must be in 100% good condition. Replace any part that shows nicks, cuts, holes, cracks, or delamination.
  1. Slide the red O-ring into the groove of the piston. Do not lubricate this O-ring.
  2. Apply a thin layer of lubricant to the inside of the pump cylinder at the retaining pin hole end.
  3. Insert the piston into the retaining pin hole end of the pump cylinder.
  4. Slide the red O-ring into the groove of the valve cap. Do not lubricate this O-ring.
  5. Slide the pump valve gasket into the holes on the cap. Do not lubricate the gasket.
  6. Insert the valve body cap into the hole in the mix inlet adapter, then insert the mix inlet assembly into the pump cylinder. The adapter must be positioned into the notch at the end of the cylinder.
  7. Secure by sliding the retaining pin through the cross holes. The head of the retaining pin should be at the top when installed.
  8. Slide the check ring into the groove of the feed tube.
  9. Install one red O-ring on each end of the mix feed tube and thoroughly lubricate.
  10. Lay the pump assembly, pump clip, cotter pin, and mix feed tube in the bottom of the mix hopper for sanitizing.
  11. Slide the large black O-ring and two smaller black O-rings into the grooves on the pump driveshaft. Thoroughly lubricate the O-rings and shaft. Do not lubricate the hex end.
  12. Install the hex end of the pump driveshaft into the drive hub at the rear wall of the mix hopper. For ease of installation, position the ball crank at the 3 o'clock position.
  13. Repeat for the other side of the machine.

Step 4 — Sanitizing

  1. Prepare a pail of approved 100 PPM sanitizing solution — 2 gal. (7.6 L) of Stera-Sheen® (055492) or 2½ gal. (9.5 L) of Kay-5®. Use warm water and follow manufacturer's specifications.
  2. Pour sanitizing solution over all parts in the bottom of the mix hopper and allow it to flow into the freezing cylinder.
  3. While solution flows in, brush-clean the mix-level sensing probe, mix hopper, mix inlet hole, air/mix pump, pump clip, mix feed tube, and cotter pin with the white hopper brush.
  4. Install the pump assembly at the rear of the mix hopper — align the drive hole in the piston with the drive crank and secure with the pump clip.
  5. Install the pump end of the mix feed tube and secure with the cotter pin. Failure to install the cotter pin before proceeding may cause sanitizer to spray on the operator.
  6. Prepare a second pail of 100 PPM sanitizing solution (same concentrations as above).
  7. Pour the second sanitizing solution into the mix hopper. Brush the exposed sides of the hopper.
  8. Place the power switch in the ON position.
  9. Press the Wash symbol. This agitates the sanitizing solution in the cylinder. Wait at least 5 minutes before proceeding.
  10. Place an empty pail beneath the door spouts. Raise the prime plug and press the Pump symbol.
  11. When a steady stream of sanitizer flows from the prime plug opening, open the draw valve. Momentarily open the center draw valve to sanitize the center door spout. Draw off all remaining sanitizing solution.
  12. Once sanitizer stops flowing from the door spout, press Wash and Pump symbols to cancel. Close the draw valve.
  13. Repeat steps 1–12 for the other side of the machine.
Do not place the machine in Auto until all sanitizing solution has been removed and priming is complete. Failure to follow this instruction may result in damage to the freezing cylinder.

Priming with Fresh Mix

Priming removes all residual sanitizing solution from the cylinder and replaces it with fresh mix before the machine enters Auto mode. Use only fresh mix — never water or recirculated product.

  1. Place an empty pail beneath the door spouts. With the prime plug in the up position, pour 2½ gal. (9.5 L) of fresh mix into the hopper and allow it to flow into the freezing cylinder.
  2. Open the draw valve to remove all sanitizing solution. When only fresh mix is flowing, close the draw valve.
  3. Once a steady stream of mix starts to flow from the prime plug opening in the bottom of the door, push the prime plug down.
  4. When mix stops bubbling down into the cylinder, remove the cotter pin from the pump outlet fitting. Insert the outlet end of the mix feed tube into the mix inlet hole. Place the inlet end into the outlet fitting of the mix pump and secure with the cotter pin.
  5. Select Auto mode. The Brush Clean Counter will start at this time.
  6. Fill the hopper with fresh mix and place the hopper cover in position.
  7. Repeat for the other side of the machine.
Draw rate adjustment: The draw handle should be adjusted to provide a flow rate of 5–7½ oz. (142–213 g) per 10 seconds. To increase the flow rate, tighten the adjustment screw on the draw handle. To decrease, loosen the screw.

Closing Procedure — Nightly Teardown

This procedure must be completed every day. You will need two cleaning pails, approved sanitizer, cleaning brushes, and single-service towels.

Draining Product from the Freezing Cylinder

  1. With a pail beneath the door spouts, open the draw valve. Press the Wash and Pump symbols simultaneously.
  2. Drain product from the freezing cylinder and mix hopper. Do not allow the pump to run when the draw valve is closed — excessive pressure will build up and cause product to spurt when the valve is opened.
  3. When product flow stops, press Wash and Pump symbols to cancel. Close the draw valve and push the prime plug down.
  4. Remove the cotter pin, mix feed tube, pump clip, and assembled air/mix pump.
  5. Repeat for the other side of the machine.

Rinsing

  1. Pour 2 gal. (7.6 L) of cool, clean water into the mix hopper. With the white hopper brush, scrub the hopper and mix-level sensing probe. Using the double-ended brush, brush-clean the mix inlet hole. Do not brush-clean the mix inlet hole while the machine is in Wash mode.
  2. With an empty pail beneath the door spouts, raise the prime plug and press the Wash symbol.
  3. When rinse water flows steadily from the prime plug opening, open the draw valve and drain all rinse water. Close the draw valve and push the prime plug down.
  4. Press the Wash symbol to cancel Wash mode.
  5. Repeat steps 1–4 using clean, warm water until the water discharged is clear.
  6. Repeat for the other side of the machine.

Disassembly

Power switch must be in the OFF position before disassembly.
  1. Remove handscrews, freezer door, beater and scraper blades, and driveshaft with driveshaft seal from the cylinder.
  2. Remove the driveshaft seal from each driveshaft.
  3. From each pump cylinder, remove the retaining pin, mix inlet adaptor, valve cap, pump gasket, and piston. Remove the O-ring from the piston and valve cap.
  4. Remove door gaskets, front bearings, pivot pin, draw handles, draw valves, prime plugs, and design caps. Remove the O-rings from the draw valves.
  5. Remove pump driveshafts from the drive hubs in the rear wall of the mix hoppers.
  6. Remove the two small O-rings and one large O-ring from each pump driveshaft.
  7. Remove the front drip tray and splash shield.
  8. Remove all drip pans and take them to the sink for cleaning.
If drip pans are filled with an excessive amount of mix, the driveshaft seal (032560) or O-rings should be replaced or properly lubricated.

Hopper Cleaning

  1. Prepare a pail of approved 100 PPM cleaning solution — Stera-Sheen® (055492) at 2 gal. (7.6 L) or Kay-5® at 2½ gal. (9.5 L). Use warm water.
  2. With the prime plug pushed down, pour the cleaning solution into the hopper and allow it to flow into the freezing cylinder.
  3. Using the white hopper brush, clean the mix hopper and mix-level sensing probes. Using the double-ended brush, clean the mix inlet hole. Do not brush-clean the mix inlet hole while in Wash mode.
  4. Press the Wash symbol. Wait at least 5 minutes.
  5. Place an empty pail beneath the door spouts.
  6. Raise the prime plug.
  7. When a steady stream of cleaning solution flows from the prime plug opening, open the draw valve and drain all solution.
  8. Once solution stops flowing from the door spout, close the draw valve and prime plug.
  9. Press the Wash symbol to cancel Wash mode.
  10. Repeat for the other side of the machine.

Manual Brush-Clean Cycle

The brush-clean cycle must be completed according to the frequency specified by your federal, state, or local regulatory agencies. Consult your governing Food Code to determine the maximum number of days allowed between brush-clean cycles. The Brush Clean Counter on the control panel displays hours since the last brush-clean.

  1. Prepare a sink with an approved 100 PPM cleaning/sanitizing solution. Use warm water and follow manufacturer's specifications. Ensure all brushes are available.
  2. Thoroughly brush-clean all disassembled parts in the cleaning solution, removing all lubricant and mix film. Brush all surfaces and holes — particularly the holes in pump components and draw valve holes in the door.
  3. Rinse all parts with clean, warm water. Place parts on a clean, dry surface to air-dry overnight.
  4. Return to the freezer with a small amount of cleaning solution. Using the black brush, clean the rear shell bearing at the back of each freezing cylinder.
  5. Using the black brush, clean the drive hub opening in the rear wall of each mix hopper.
  6. Wipe all exterior surfaces with a clean, sanitized towel.
The Brush Clean Counter resets to zero when the machine is brush-cleaned. The servings counter also resets. Your Taylor service technician will check this counter during PM visits.

Maintenance Checks During Brush-Clean

  • Scraper blades — Replace nicked or damaged blades. Both blades must be replaced together. The blade hole must fit securely over the pin.
  • Rear shell bearing — Check for signs of wear (excessive mix in the drip pan). Clean the rear shell bearing and female hex drive socket using a screwdriver and cloth towel.
  • O-rings and seals — Discard and replace if worn, torn, or fitting too loosely.
  • Condenser (air-cooled machines) — Clean monthly with a soft brush. Never use screwdrivers or metal probes between the fins. For machines with air filters, vacuum monthly.
  • Water lines (water-cooled machines) — Check for kinks or leaks. Deteriorated water lines must be replaced by an authorized Taylor distributor only.
  • Lubrication — Follow all lubrication procedures per the assembly section above.

Daily Cleaning Checklist

Post this near your machine for staff reference. Every item is required per the Taylor manual and standard health department compliance.

  • Opening — Assemble driveshaft, beater, and door — Lubricate all parts per assembly procedure. Inspect blades and beater shoes for wear.
  • Opening — Assemble mix pump — Red O-rings and pump gasket must not be lubricated. All other pump O-rings and driveshaft must be lubricated.
  • Opening — Sanitize with 100 PPM solution — Stera-Sheen at 2 gal. or Kay-5 at 2½ gal. per side. Agitate minimum 5 minutes in Wash mode.
  • Opening — Prime with fresh mix — Remove all sanitizer before entering Auto mode. Prime plug must be pushed down before selecting Auto.
  • Closing — Drain product — Press Wash and Pump simultaneously. Never run pump with draw valve closed.
  • Closing — Rinse hopper — Rinse with cool water, then warm water until clear. Brush mix inlet hole with double-ended brush.
  • Closing — Hopper clean — 100 PPM cleaning solution, Wash mode, minimum 5 minutes. Drain completely.
  • Closing — Disassemble — Remove door, beater, driveshaft, pump, drip pans. Inspect drip pans — excessive mix indicates driveshaft seal issue.
  • Overnight — Air-dry disassembled parts — Place on a clean, dry surface. Do not store in water or covered.

Common Cleaning Questions

The Taylor manual specifies 2 gallons (7.6 L) of Stera-Sheen® Green Label per batch at 100 PPM. Always use warm water and follow the manufacturer's label exactly. The red O-rings on the piston and valve cap create the pressure seal that allows the mix pump to draw product into the cylinder. Lubricating them causes them to slip in their grooves and lose their seal — you'll get product that's too thick, inconsistent, or won't prime at all. Similarly, the pump valve gasket must stay dry. Every other part of the assembly that contacts metal gets lubricated; the red components never do.
The middle section of the boot seal must be convex — it should extend outward away from the seal. If it is concave (caving inward), the seal is installed inside-out. Remove it and turn it inside-out before reinstalling. A backwards boot seal is one of the most common causes of mix leakage into the long drip pan. The seal to replace is Part# 032560.
Daily sanitizing (the opening/closing procedure) is required every day of operation. The full brush-clean cycle — where you completely disassemble all parts and wash them in the sink — is governed by your local health authority. In New York State, the standard requirement is every 14 days, but your specific code controls. The C712's Brush Clean Counter tracks hours since the last brush-clean so your health inspector can verify compliance.

Running the cylinder with sanitizer present can damage the freezing cylinder wall. Always complete the full prime — until only fresh mix is flowing from the prime plug — before selecting Auto.
