The Rolling Cones is a neighborhood ice cream joint where everyone's welcome and anything goes. The concept lived in the founders' heads for years before it lived anywhere else — and it finally got its shot when they left San Francisco and landed in Kingston, NY.

What started as an ice cream trailer turned into something bigger almost immediately. The trailer became a gateway into the community — introducing them to artists, musicians, farmers, weirdos, families, line cooks, and lifelong friends they never would have met otherwise. That's the part you can't plan for, and it's the part that matters most.

The product backs up the attitude. Sundaes are built with premium ingredients sourced either in-house or through collaborations with local culinary talent across the Hudson Valley — a genuine dependence on the same community that showed up for them. They get by with a little help from their friends, and the menu shows it.

The Rolling Cones has never been interested in nostalgia for nostalgia's sake. The goal is a place that feels alive: loud music, melted cones, long lines, chance encounters, and summer nights that stretch a little longer than they should. At its core, it's about creating experiences that feel a little messy, a little joyful, and deeply human.

Building a soft serve program inside a trailer is a different problem than building one inside a building. Power constraints, spatial limits, and the need for equipment that performs consistently while mobile — none of it is standard. Taylor Upstate handled the full rig buildout: sourcing the machine on time and on budget, then working through power, layout, and installation to get the whole kit operational.
